Meet your chef and small group at CiaoFoodies Hub in central Florence. Settle in, grab your apron, and get a quick overview of what you'll cook, from handmade pasta to classic tiramisù.
Shop for ingredients at Sant'Ambrogio Market
In the morning class, follow the chef through Sant'Ambrogio Market to pick seasonal produce and local staples. You'll see how Florentines shop, then head back to the kitchen.
Start the sauces: ragù and tomato
Back at the trattoria, get the pots going first so flavors have time to develop. The chef walks you through timing, seasoning, and technique so your ragù and tomato sauce are ready when the pasta hits the water.
Knead fresh pasta dough with eggs and flour
Roll up your sleeves and mix the simplest ingredients into silky dough. Learn how to read texture by feel, then let it rest while you prep the next course, so it rolls cleanly and cooks with the right bite.
Make tiramisù and snack on Tuscan appetizers
Move to the sweet course and build a creamy mascarpone mixture step by step. While it chills, enjoy Tuscan appetizers and hear a few stories about Italy's long culinary tradition from the chef as you reset for pasta shaping.
Shape tagliatelle and ricotta-and-spinach ravioli
Roll, cut, and fill your dough into two classics: ribbons of tagliatelle and ricotta-and-spinach ravioli. Once cooked and sauced, sit down to the meal you made and enjoy it with house wine or a non-alcoholic alternative.
Your tour ends at the kitchen in central Florence
Finish where you started, full and proud of what you've made. Before you go, collect your participation certificate and take-home recipe booklet, so you can recreate Florence flavors in your own kitchen.

Accessibility: Unfortunately, this tour is not wheelchair accessible.
Dietary restrictions: Please inform us in advance, and we will do our best to accommodate your dietary needs by offering alternatives when possible.
Alcohol consumption: This experience includes unlimited house wine. If you don't drink alcohol, please let us know in advance and an alternative drink option will be provided.
Market visit timing: The Sant'Ambrogio Market visit is only included in the 9 am shift (except Sundays and bank holidays, when the market is closed).
Dress code: Comfortable shoes are recommended.
Menu: The menu may vary slightly depending on the season and the availability of ingredients.
Tour changes: Afternoon and Sunday departures do not include the Sant'Ambrogio Market visit and last 3 hours in total.
Please note: For safety reasons, the experience is not recommended for guests with celiac disease or children under 6.
Check-in: Arrive 15 minutes early for check-in at the meeting point so the group can start on time.

Chef Pavan was amazingly patient, kind and respectful. I highly recommend taking a cooking class that takes you to the community market. My only regret is that we had taken the cooking class earlier on our trip so we could access the quality goods. Our chef was so patient with us as he taught us how to make pasta and dessert. I will be taking his pointers home with me and look forward to making these items at home.

We had a wonderful, small-group cooking experience starting with getting our ingredients at the Sant'Ambrogio Market - where real Florentines do their shopping. Chef Tobias was engaging and informative as we worked our way through two sauces, pasta making and tiramisu. Rosso and Bianco vino were plentiful. We very much recommend this for any foodies!
