Shop for ingredients at Sant'Ambrogio Market
In the morning class, follow the chef through Sant'Ambrogio Market to pick seasonal produce and local staples. You'll see how Florentines shop, then head back to the kitchen.
Start the sauces: ragù and tomato
Back at the trattoria, get the pots going first so flavors have time to develop. The chef walks you through timing, seasoning, and technique so your ragù and tomato sauce are ready when the pasta hits the water.
Knead fresh pasta dough with eggs and flour

Market visit timing: The Sant'Ambrogio Market visit is only included in the 9 am shift (except Sundays and bank holidays, when the market is closed).
Dress code: Comfortable shoes are recommended.
Menu: The menu may vary slightly depending on the season and the availability of ingredients.
Tour changes: Afternoon and Sunday departures do not include the Sant'Ambrogio Market visit and last 3 hours in total.
Please note: For safety reasons, the experience is not recommended for guests with celiac disease or children under 6.
