Itinerary
Meet at a beloved Milanese restaurant
Your class begins at a local restaurant in Milan's historic center, where your chef welcomes you with a glass of Prosecco. You'll slip on an apron and step into a working Italian kitchen to discover the secrets behind handmade pasta.
Learn the art of pasta dough
Guided by your chef, you'll start by making fresh pasta dough from scratch. You'll learn which flour to use, how to knead the dough to the right texture, and discover the techniques Italian grandmothers have passed down for generations.
Roll and cut fettuccine by hand
Next, you'll roll out your dough and cut it into delicate fettuccine ribbons. Your chef shows you how to shape each strand so it holds sauce perfectly, revealing tricks that transform simple ingredients into restaurant-quality pasta.
Shape ravioli with traditional techniques
Then, you'll fold and seal tender ravioli parcels, learning the proper pinching technique to keep the filling inside. Your chef explains how different shapes suit different sauces, connecting each detail to Italian culinary tradition.
Prepare authentic tiramisù
After mastering pasta, you'll assemble layers of espresso-soaked ladyfingers, mascarpone cream, and cocoa to create Italy's most iconic dessert. Your chef walks you through each step so you can recreate this classic treat at home.
Savor your homemade feast
Finally, you'll sit down together to enjoy the dishes you've prepared, paired with Italian wine. You'll share stories and laughter with your group, finishing the meal with limoncello, just like Italians do after a satisfying dinner.
Your tour ends after the feast
Your class concludes at the restaurant where you started, leaving you with a recipe booklet and the confidence to recreate these Italian dishes at home.
